Basic Muffin Recipe

I finally found the perfect (for now) basic muffin recipe!

Ingredients:
2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil

The muffins came out soft,fluffy, a little crusty exterior and taste just right! This recipe yields 12 regular sized muffins.

1. Preheat oven to 400F.
2. Combine 1 1/3 cup all purpose flour, 2/3 cup whole wheat flour, 1 tablespoon baking powder, 1/2 teaspoon salt and 1/2 cup sugar in a large bowl.
3. In another smaller bowl, briefly beat one egg. Add 3/4 cup milk, 1/3 cup vegetable oil, 1 teaspoon vanilla and mix well.
4. Create a well in the dry ingredients. Slowly pour in the wet ingredients, mixing while pouring. Use a spatula and mix until just combined.
5. Add your desired flavoring (For example you can add 1/2 cup chocolate chips for chocolate chip muffins or 1/2 cup raisins + 1 teaspoon cinnamon for cinnamon raisin muffins or 3/4 cup blueberries + 1 tablespoon lemon juice for lemon blueberries muffin).
6. Bake for 20 minutes.

I divided the batter into 3 batches and made cinnamon raisin muffins (top row), chocolate chip muffins (middle row) and plain muffins (bottom row)

Note: Awesome breakfast item.
