Green Tea Almond Cookies

Makes 49 cookies (3cm x 4cm)

Ingredients

160g butter, room temperature
70g sugar
1 egg, lightly beaten

180g all-purpose flour
5g matcha (green tea powder)
*sifted

50g sliced almonds

The pictures looked really good and the recipe seems pretty simple too. The original measurements were in grams so I just converted them to cups. And by the way, the conversion rate is different for different ingredients, for example 110 grams of all purpose flour equals 1 cup whereas 110 grams of granulated sugar equals (almost) 1/2 cup, so make sure to do individual conversion for each ingredient.

1. Beat 5 tablespoons room temperature butter until light and fluffy.
2. Add 1/3 cup sugar, continue beating.
3. Add 1 slightly beaten egg, combine until just mixed.
4. In another bowl, mix 1 1/2 cup all purpose flour and 1 tablespoon green tea powder (matcha). Sift and add to the butter mixture. Mix until dough becomes smooth, but do not overmix.
5. Gently mix in 1/2 cup sliced almonds. Briefly fold in the almonds until just combined.
6. Divide dough into 2. Form 2 roll and wrap with parchment paper then cling wrap. Chill overnight in fridge.
7. Preheat oven to 350F.
8. Line baking sheet with parchment paper.
9. Slice dough ~1cm thick.
10. Bake 15 minutes.

The cookies are light, crunchy and the sweetness is just right.


Note: Great recipe. Could do with more sugar (maybe use 1/2 cup instead of 1/3 cup) if I am to make this for most people.
