Oven-Baked Whole Chicken

This was my first time handling and cooking a whole chicken. I just washed it and marinated with some salt while I prepare the other ingredients required to bake the chicken.

1/2 cup Bisquick baking mix
1 tablespoon melted butter
some ground black pepper
some garlic powder
some italian seasoning
=> Mix in a bowl and coat all over chicken

2 garlic, peeled and drizzled with olive oil, were stuffed in the chicken. The chicken was placed on a baking sheet drizzled with canola oil. Carrots and potatoes were drizzled with olive oil before being sprinkled around the chicken. More italian seasoning was drizzled on the chicken and vegetables before baking at 180F for about an hour. I set the timer at 45 minutes to check on the chicken but it was not brown enough.

The chicken skin was a little crispy and the meat was not dry but the baby carrots were a little dry. The chicken taste very good, overall.

Note: The baby carrots were a little dry. Maybe add the carrots while halfway through baking, let's say at 20 minutes after the baking started.
