Whole Wheat French Bread

I thought, why not try baking some dinner rolls or loaves instead of buying them all the time? I went to the supermarket and got some whole wheat flour and yeast, planning to make whole wheat french bread. I love french bread because they don't feel oily at all and the crust is very crunchy. Browsed online and found this recipe

I cut the recipe in half just in case it fails.

1 cup whole wheat flour
1.5 cup all purpose flour
=> Mix and sift

Add:
1/2 tablespoon sugar
1 teaspoon salt
=> Mix. Create well in center of bowl.

Add into well:
1 tablespoon yeast
2 cups lukewarm water
1 tablespoon flour
=> Wait for bubbles to appear, approximately 10 mins

Slowly fold flour over liquid to form dough. Knead 10 minutes (I searched YouTube for kneading techniques). Place dough in lightly floured bowl, cover with damp cloth and let rise to twice its size, approximately 2 hours.

Place bread on floured surface. Slam bread with palms, hard. Knead and reshape into desired size. Draw diagonal lines on top. Coat top with beaten egg. Bake for 30 minutes at 400F (I baked for 40 minutes before the bread turned golden brown).


Taste was okay but bread was too dense.

Note: After the first rise, knead bread for 5 minutes. But do not over-knead (I guess we can only learn in time).
