I had some frozen blueberries that had been sitting in the freezer for a while so I decided to use them. I soaked the blueberries in water thinking it is better to thaw them first. I used the same basic recipe but added another 1/2 cup of sugar because the blueberries were really sour. I baked using my basic muffin recipe and added another 1/2 cup of thawed blueberries. The muffins came out too sweet and the blueberries bleed all over. Not good.
Note: Do not defrost frozen blueberries or they will bleed all over. Also, adding more sugar will not reduce the sourness of blueberries. It seems to make the blueberries tasted more sour since the muffins are so sweet.
