Banana Oatmeal Raisin Muffin

Yes it is the same bunch of browning bananas that inspired me to make this. I used the same basic recipe for making muffins plus other essential ingredients:

1 cup all-purpose flour
2 teaspoon baking powder
some salt
1 egg, beaten until fluffy
1/2 cup milk
1/2 cup light brown sugar
2 tablespoon butter
1 teaspoon vanilla extract
2 mashed bananas
1/2 cup instant oat
1/2 cup raisin

Dry ingredients (flour, baking powder, salt, oatmeal) were mixed in one bowl. In another bowl with the beaten egg, wet ingredients (brown sugar, softened butter, milk, mashed bananas, vanilla essence) were blended with hand mixer then poured into center of dry ingredients and mixed by scooping dry ingredients over wet ingredients 10 to 15 times. Do not over-mix. Batter was poured into sprayed muffin pan and baked in preheated oven for 17 minutes at 400F. The muffins were not brown enough so I baked for another 5 minutes, making the total baking time 20 minutes. Not all ovens are the same so it is recommended that you check in 15 minutes.

The muffins were good and moist. Sweetness was just right and the bananas smell amazing. This recipe yields 6 regular sized muffins.

Note: I was expecting more fluffy muffins. Maybe I need to use baking soda in addition to baking powder. Or maybe use other kinds of flour instead of all-purpose flour.
