Oatmeal Raisin Cookie

Things You'll Need

  • 1 1/2 cups old fashioned oats
  • 1/2 cup all-purpose flour
  • 1/4 cup dark raisins
  • 1/4 cup golden raisins
  • 1/4 cup dried cranberries
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 6 tbsp. unsalted butter (room temperature)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp. ground cinnamon
  • 1 tsp. pure vanilla extract
  • 4 tbsp. dark raisins
  • 4 tbsp. golden raisins















I used Sunmaid's Raisin and Cranberries mix instead of separate raisins and dried cranberries. I also lessen the amount of oatmeal, replaced baking soda with baking powder and omitted the topping.

1. Preheat oven to 350F.
2. Whisk together 1 cup old fashioned oats, 1/4 cup all purpose flour, 3/4 cup raisin cranberries mix, 1/2 teaspoon baking soda and 1/2 teaspoon salt.
3. In a separate bowl, beat 6 tablespoon room temperature unsalted butter with 1/2 cup brown sugar and  1/4 cup granulated sugar until light and fluffy. Add 1 egg, 1/2 teaspoon ground cinnamon and 1 teaspoon vanilla extract and beat until well blended.
4. Gradually fold in the oat mixture into the butter mixture.
5. Drop the dough onto parchment paper on baking sheet, 2 inches apart.
6. Bake for 15 minutes or until golden brown but still nice and soft.

I took a huge bite. Mmmmm...


I love how you can see the oats on the cookie but my bf hates that. I will use the instant oat instead of old-fashioned oat if I am to make this for him next time.
